Yeah, I only drop by on the engine thread. Lately it’s been too technical so it’s out of my league to comment.

Now this, this is really out of my league. I don’t even have a charcoal grill at home. :oops:

From what I read the perfect pizza is baked at about 700F for about 3 minutes so 700F is the temp these types of ovens are designed to achieve and maintain.

After the fire is out the temp will start to drop to where other things like to be cooked like bread or I'm told you can roast a turkey because it stays hot for hours.

I added a 2.5" concrete slab over the vermiculite ( insulation) to add a bit more thermal mass that will help the oven hold heat a bit longer and also put a thermal break between the mass in the oven and the apron, again to help keep the heat inside.

At this point I think I'm done with my part and its now ready for my brother to build the actual oven in August....back to the patio for a couple weeks

Delivery is out of the question. The whole point is to put the pizza production next to the beer fridge.....I can't leave the beer fridge.

No landscaping this year beyond regrading behind the garage....way too busy. Next year I'll try to get the yard back in shape.

So, 6 hours to heat the oven and 3 minutes to bake the pizza. Humm ...

I was once enjoying a great pizza baked in an oven like yours in Lagos Nigeria. Halfway through, I noticed they were burning rotting recycled 2x4s. It is always a great mystery to me how to achieve the complex flavors and aromas of great food.

I'm told the best way to light it is a propane burned like for burning weeds. You lod to wood then point the burner at it for 10-15 minutes and the wood is burning hot, wait 30 more minutes and it's ready to cook ....or so I'm told....well find out!
